Vodka fruit cake

This cake is soft, moist and really light. It’s an easy bake and is a great way to use up leftover dried fruit. Try making our Christmas pudding vodka and use the left-over vodka-infused fruit for this recipe!

To make the Vodka infused fruit

Follow our recipe for Christmas pudding vodka:

  • vodka
  • 600g mixed dried fruit
  • 150g caster sugar
  • 2 cinnamon sticks
  • 3 tsp mixed spice
  • 2 tsp ground cloves
  • 3 tsp ground nutmeg
  • star anise
  • rind of 3 oranges and 3 lemons
  • small square grated fresh ginger
  • Simply add all the ingredients to a large bowl, and pour over enough vodka to cover the fruit.
  • Stir thoroughly, cover in cling film and leave in the fridge for 3-5 days.
  • Remove from the fridge, stir again and pass through a muslin until you’ve removed as much liquid as possible and you’re left with the fruit.
  • Remove the cinnamon sticks and star anise.

To make the cake

  • 300g unsalted softened butter
  • 300g light brown sugar
  • 150g plain flour
  • 5 large eggs
  • 150g flaked almonds
  • Cream the butter and sugar together in a bowl
  • Mix in the eggs and flour
  • Add the flaked almonds and vodka infused fruit
  • Stir until all ingredients combined
  • Add to a parchment-lined baking tin
  • Bake on 160°C / Fan: 140°C / 325°F for 2 hours
