This cake is soft, moist and really light. It’s an easy bake and is a great way to use up leftover dried fruit. Try making our Christmas pudding vodka and use the left-over vodka-infused fruit for this recipe!
To make the Vodka infused fruit
Follow our recipe for Christmas pudding vodka:
- vodka
- 600g mixed dried fruit
- 150g caster sugar
- 2 cinnamon sticks
- 3 tsp mixed spice
- 2 tsp ground cloves
- 3 tsp ground nutmeg
- star anise
- rind of 3 oranges and 3 lemons
- small square grated fresh ginger
- Simply add all the ingredients to a large bowl, and pour over enough vodka to cover the fruit.
- Stir thoroughly, cover in cling film and leave in the fridge for 3-5 days.
- Remove from the fridge, stir again and pass through a muslin until you’ve removed as much liquid as possible and you’re left with the fruit.
- Remove the cinnamon sticks and star anise.
To make the cake
- 300g unsalted softened butter
- 300g light brown sugar
- 150g plain flour
- 5 large eggs
- 150g flaked almonds
- Cream the butter and sugar together in a bowl
- Mix in the eggs and flour
- Add the flaked almonds and vodka infused fruit
- Stir until all ingredients combined
- Add to a parchment-lined baking tin
- Bake on 160°C / Fan: 140°C / 325°F for 2 hours
