A super quick and easy lunch that’s healthy, looks impressive and can comfortably feed 4 people.
Ingredients
- Ready rolled puff pastry. You can use the standard or low-fat version.
- 40g Tomato puree
- A big handful of spinach.
- 8 rashers thick-cut bacon (smoked or unsmoked – your choice).
- 100g Feta cheese
Method
- Pre-heat the oven to 220°C / Fan: 200°C / 425°F
- Remove the puff pastry from the fridge and leave to one side for it to warm to room temperature for ten minutes.
- Whist you wait, cut the bacon into small strips or cubes and fry on a high heat until crispy and golden.
- Roll out the puff pastry onto a baking tray using the baking sheet provided with the pastry
- Squeeze approx 1/3 tube tomato puree over the pasty and spread thin with a knife
- Spread a big handful of spinach over the top of the tomato puree. Try and spread it thinly without any gaps.
- Sprinkle the crispy bacon evenly over the spinach.
- Cut the feta into bite-size chunks and sprinkle over the top.
- Add salt and pepper to taste
- Place tray in oven and cook for 20-25 minutes.
- Slice into 4-6 portions.
- We like to serve with a balsamic glazed spinach and tomato salad.
Top tips
- Keep leftovers in the fridge for a couple of days.
- Can be eaten hot or cold so makes a great packed lunch box treat
